Mini Devonshire Quiches

Pack up your hamper and head out into the gorgeous Devonshire countryside! Nothing says a proper British picnic quite like a batch of bite-sized, golden quiches. 

To give these mini quiches an extra velvety texture and a deliciously delicate tang, we use rich Langage Farm Natural Yogurt right in the egg custard mixture. Made by hand by local people using the freshest milk from our happy Jersey and Guernsey cows, it brings a true taste of heaven to your picnic blanket.

Ingredients:

  • 1 roll of ready-made shortcrust pastry

  • 3 large eggs

  • 4 tablespoons Langage Farm Natural Yogurt

  • 100g mature Devon cheddar cheese, freshly grated

  • 2 tablespoons fresh chives, finely chopped

  • Salt and black pepper to taste

Method:

  1. Preheat and prep: Preheat your oven to 200°C (180°C fan) and lightly grease a 12-hole muffin tin.

  2. Cut the pastry: Roll out the shortcrust pastry and use a round pastry cutter to stamp out circles large enough to line each hole of your muffin tin. Press them gently into place.

  3. Mix the filling: In a jug, whisk together the eggs, Langage Farm Natural Yogurt, chopped chives, salt, and black pepper until smooth.

  4. Fill and bake: Divide the grated cheddar cheese evenly among the pastry cases. Pour the yogurt and egg custard mixture over the cheese until each case is about three-quarters full.

  5. Bake to perfection: Bake in the oven for 18 to 20 minutes until the pastry is golden brown and the filling is set and lightly puffed. Allow them to cool completely before packing them into your picnic basket.
