440g Langage Farm full fat soft cheese
120g digestive biscuits
50g melted butter
70ml Langage Farm double cream
2 large free range eggs
1/2 tsp vanilla extract
Crush biscuit and stir into melted butter, transfer the mixture to a greased springform and press into base. Mix together Langage Farm full fat soft cheese (room temp) and double cream with eggs and vanilla extract in a bowl. Pour this mixture onto the biscuit base and place in a preheated oven at 150°C for 30 mins. Turn off the heat and allow to finish cooking in the residual heat of the oven. It will still be quite wobble at this stage. When cooled the cheesecake can be topped with ingredients of your choice. Try melted jam, fresh fruit and Langage Farm whipping cream!
