Creamy Spicy Meatballs with Pasta

Ingredients:

For the Meatballs:

  • 450g minced beef (or a mixture of beef and pork)
    60g breadcrumbs
    30g grated Parmesan cheese
    60ml milk
    1 small onion, finely chopped
    2 cloves garlic, minced
    15g fresh parsley, chopped
    1 egg
    1/2 teaspoon salt
    1/2 teaspoon black pepper
    1/2 teaspoon crushed red pepper flakes (adjust to your spice preference)

For the Creamy Spicy Tomato Sauce:

  • 30ml olive oil
    1 onion, finely chopped
    2 cloves garlic, minced
    1 can (400g) crushed tomatoes
    100ml double cream
  • 150 grams of Langage Farm Clotted Cream
    1 tomato, diced
    1 teaspoon dried basil
    1/2 teaspoon dried oregano
    Salt and black pepper to taste
    Additional crushed red pepper flakes (adjust to your spice preference)
    30g grated Parmesan cheese

For the Pasta:

340g pasta (such as spaghetti or fettuccine)
Fresh basil or parsley for garnish (optional)
Instructions:

Prepare the Meatballs:

In a large mixing bowl, combine the minced beef, breadcrumbs, grated Parmesan cheese, milk, chopped onion, minced garlic, chopped parsley, egg, salt, black pepper, and crushed red pepper flakes.
Mix everything together until well combined.
Shape the mixture into meatballs, about 2.5-3.8cm (1-1.5 inches) in diameter. You should get approximately 20 meatballs.

Cook the Pasta:

Bring a large pot of salted water to the boil.
Cook the pasta according to the package instructions until al dente. Drain and set aside.

Cook the Meatballs:

In a large frying pan, heat 2 tablespoons of olive oil over medium-high heat.
Add the meatballs to the skillet and cook, turning them occasionally, until they are browned on all sides and cooked through, about 10-12 minutes. Transfer the cooked meatballs to a plate and set aside.

Make the Creamy Spicy Tomato Sauce:

In the same pan, add a bit more olive oil if needed. Add the finely chopped onion and minced garlic. Cook until the onion becomes translucent, about 2-3 minutes.
Stir in the crushed tomatoes, diced tomato, dried basil, and dried oregano. Cook for another 5 minutes, allowing the sauce to simmer and thicken.
Pour in the double cream and clotted cream and stir to combine. Let the sauce simmer for an additional 2-3 minutes.
Season the sauce with salt, black pepper, and additional crushed red pepper flakes to taste.
Return the cooked meatballs to the pan, coating them with the creamy spicy tomato sauce. Allow them to simmer in the sauce for another 5 minutes.
Serve:

Place a portion of cooked pasta on each plate.
Top with the creamy spicy tomato meatballs and sauce.
Sprinkle with grated Parmesan cheese and garnish with fresh basil or parsley if desired.
