Hot Cross Buns Ice cream Sandwich!

Try these delightful Easter-inspired ice cream sandwiches featuring hot cross buns! They’re a fantastic way to enjoy leftover Easter chocolate and create a lavish dessert that the entire family will adore. If you have any extra mini eggs lying around, feel free to add them to the ice cream for an extra treat!

INGREDIENTS:

1 litre of vanilla or chocolate ice cream, softened (such as Langage Farm)
300g of chocolate eggs, broken or chopped
6 hot cross buns, split
200ml of single cream
200g of finely chopped dark chocolate
INSTRUCTIONS:

Mix the softened ice cream with the Easter egg chocolate, then return the mixture to the freezer for at least 2 hours.
To make the ganache, heat the cream in a small saucepan over medium heat until it simmers. Place the chopped chocolate in a heatproof bowl. Pour the hot cream over the chocolate and let it sit for 5 minutes to melt, then stir until smooth.
Lightly toast the hot cross buns. Scoop the ice cream onto the base of each bun, then drizzle with some of the smooth ganache. Top with the bun lid and enjoy immediately.”
