Spiced Devon Apple Upside Down Cake
September is the perfect time to fire up the oven for a comforting, homemade bake. Skip the heavy frostings and try this beautifully moist, incredibly simple upside down cake that showcases the rich, comforting flavours of the harvest season without using yogurt.

Ingredients:
3 sweet eating apples, peeled, cored, and sliced into thin wedges
50g unsalted butter (plus extra for greasing)
75g light brown soft sugar
175g self-raising flour
150g caster sugar
3 large eggs
125ml neutral vegetable oil (or melted unsalted butter)
3 tablespoons of Langage Farm Devonshire Clotted Cream (plus extra to serve)
1 teaspoon ground cinnamon
1 teaspoon baking powder
A pinch of salt
Method:
Preheat and line: Preheat your oven to 180°C (160°C fan). Grease a 9-inch round cake tin and line the base with baking parchment.
Create the caramel fruit layer: Melt the 50g of unsalted butter in a small pan, stir in the light brown soft sugar and a pinch of cinnamon, then pour the mixture evenly across the bottom of your lined cake tin. Arrange the apple slices neatly in a circular pattern over the caramel base.
Mix the batter: In a large mixing bowl, whisk together the eggs, caster sugar, vegetable oil, and 3 tablespoons of Langage Farm Devonshire Clotted Cream until smooth and fully combined.
Fold in dry ingredients: Sift in the self-raising flour, baking powder, and a pinch of salt. Gently fold everything together using a spatula until just incorporated into a rich, smooth batter.
Bake: Spoon the batter carefully over the arranged apple slices, smoothing the top gently. Bake in the centre of the oven for 40 to 45 minutes until golden brown and a skewer inserted into the centre comes out clean.
Invert and serve: Let the cake cool in the tin for 10 minutes, then carefully run a knife around the edges and invert it onto a serving plate so the caramel apples sit proudly on top. Serve warm with an extra dollop of luxurious Langage Farm Devonshire Clotted Cream.
