Pumpkin Soup with Langage Farm Clotted Cream

Ingredients:

1 medium-sized pumpkin, peeled and diced
1 onion, chopped
2 cloves of garlic, minced
1 litre vegetable stock
150g Langage Farm clotted cream
Salt and pepper to taste
Fresh chives for garnish

Instructions:

In a large pot, sauté the chopped onion and garlic until soft.

Add the diced pumpkin and vegetable stock. Bring to a boil, then reduce the heat and simmer until the pumpkin is tender, about 20 minutes.

Use a blender to puree the soup until smooth.

Stir in the Langage Farm clotted cream and season with salt and pepper.

Serve hot, garnished with fresh chives for extra flavour and a dollop of clotted cream for a luxurious finish.
