Clotted Cream & Gingerbread Trifles

These gingerbread trifles are a perfect, no-bake dessert that brings the flavours of Christmas together with the richness of clotted cream!

Ingredients:

  • 200g gingerbread cookies, crumbled
  • 150ml Langage Farm clotted cream
  • 200ml double cream
  • 2 tbsp icing sugar
  • 100g mascarpone cheese
  • 100g mixed berries (like raspberries or cranberries)
  • A pinch of ground cinnamon
  • A few mint leaves for garnish (optional)

Method:

  1. Prepare the cream mixture: In a bowl, whisk together the clotted cream, double cream, icing sugar, and mascarpone cheese until smooth and thick.
  2. Layer the trifles: In individual serving glasses or bowls, layer the crumbled gingerbread cookies at the bottom.
  3. Add the cream: Spoon a generous amount of the cream mixture on top of the gingerbread layer.
  4. Add the berries: Top with a few fresh berries and a light sprinkle of ground cinnamon.
  5. Chill: Place the trifles in the fridge for at least 2 hours to allow the flavours to set.
  6. Serve: Garnish with fresh mint leaves before serving for a festive touch.
