
Clotted Cream & Gingerbread Trifles
These gingerbread trifles are a perfect, no-bake dessert that brings the flavours of Christmas together with the richness of clotted cream!
Ingredients:
- 200g gingerbread cookies, crumbled
- 150ml Langage Farm clotted cream
- 200ml double cream
- 2 tbsp icing sugar
- 100g mascarpone cheese
- 100g mixed berries (like raspberries or cranberries)
- A pinch of ground cinnamon
- A few mint leaves for garnish (optional)
Method:
- Prepare the cream mixture: In a bowl, whisk together the clotted cream, double cream, icing sugar, and mascarpone cheese until smooth and thick.
- Layer the trifles: In individual serving glasses or bowls, layer the crumbled gingerbread cookies at the bottom.
- Add the cream: Spoon a generous amount of the cream mixture on top of the gingerbread layer.
- Add the berries: Top with a few fresh berries and a light sprinkle of ground cinnamon.
- Chill: Place the trifles in the fridge for at least 2 hours to allow the flavours to set.
- Serve: Garnish with fresh mint leaves before serving for a festive touch.
