Ingredients:

For the Pastry:

350g all-purpose flour
1 teaspoon salt
225g cold unsalted butter, cubed
6-8 tablespoons ice-cold water

For the Apple Filling:

6-7 medium-sized apples (a mix of sweet and tart varieties, such as Granny Smith and Bramley)
100g granulated sugar
50g light brown sugar
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground allspice
2 tablespoons lemon juice
2 tablespoons cornflour
25g unsalted butter, cut into small pieces

Instructions:

Prepare the Pastry:

In a large mixing bowl, combine the flour and salt.
Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your hands, work the butter into the flour until the mixture resembles coarse crumbs.
Gradually add ice-cold water, one tablespoon at a time, and mix until the dough just comes together. Be careful not to overwork the dough.
Divide the dough into two equal portions, form them into disks, wrap them in plastic wrap, and refrigerate for at least 30 minutes.
