Christmas Cranberry Clotted Cream Tart

Ingredients:

For the Tart Crust:

  • 1 ½ cups plain flour
  • 115g unsalted butter, chilled and cubed
  • 2-3 tablespoons cold water
  • Pinch of salt

For the Filling:

  • 175g fresh cranberries
  • 100g caster sugar
  • Zest of 1 orange
  • 225ml Langage Farm Clotted Cream
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • Icing sugar (for dusting)

Instructions:

1. Prepare the Tart Crust:

  • Preheat your oven to 180°C (350°F/Gas Mark 4).
  • In a food processor, pulse the flour, salt, and chilled cubed butter until it resembles breadcrumbs.
  • Gradually add cold water, one tablespoon at a time, pulsing until the dough comes together.
  • Form the dough into a ball, wrap it in cling film, and refrigerate for 30 minutes.
  • Roll out the dough on a floured surface to fit your tart tin. Press the dough gently into the tin, trimming any excess. Prick the bottom with a fork and place baking parchment on top, filling it with baking beans or dried pulses.
  • Blind bake the crust for 15-20 minutes until lightly golden. Remove from the oven and let it cool.

2. Prepare the Cranberry Filling:

  • In a saucepan, combine fresh cranberries, caster sugar, and orange zest. Cook over medium heat, stirring occasionally, until the cranberries burst and the mixture thickens slightly (about 8-10 minutes). Remove from heat and let it cool.

3. Assemble the Tart:

  • Spread the cooled cranberry mixture evenly over the baked tart crust.
  • In a mixing bowl, whisk together Langage Farm Clotted Cream, eggs, and vanilla extract until smooth.
  • Carefully pour the Clotted Cream mixture over the cranberry layer in the tart crust, ensuring it spreads evenly.

4. Bake and Serve:

  • Place the tart back in the oven and bake for 25-30 minutes until the filling is set and has a slight jiggle in the centre.
  • Once done, remove the tart from the oven and let it cool to room temperature. Top with mixed berries if prefered.
