
Summer Pasta with Langage Farm Clotted Cream

Ingredients
For the Pasta:
300g pasta (penne, fusilli, or your favourite shape)
2 tbsp olive oil
1 small onion, finely chopped
2 cloves garlic, minced
1 courgette, sliced
1 red bell pepper, sliced
1 cup cherry tomatoes, halved (approximately 150g)
100g Langage Farm clotted cream
120ml vegetable or chicken stock
25g grated Parmesan cheese (optional)
2 tbsp fresh basil, chopped
2 tbsp fresh parsley, chopped
Salt and freshly ground black pepper, to taste
Instructions
Cook the Pasta:
- Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Drain and set aside.
Prepare the Sauce:
- In a large skillet or frying pan, heat the olive oil over medium heat.
- Add the chopped onion and cook until it becomes translucent, about 3-4 minutes.
- Stir in the minced garlic and cook for an additional 1 minute, until fragrant.
- Add the sliced zucchini, red bell pepper, and cherry tomatoes to the pan. Cook, stirring occasionally, until the vegetables are tender, about 5-7 minutes.
Make the Cream Sauce:
- Reduce the heat to low and stir in the Langage Farm clotted cream, mixing until well combined and heated through.
- Pour in the vegetable or chicken broth and continue to cook, stirring, until the sauce is slightly thickened and smooth.
- Season with salt and freshly ground black pepper to taste.
Combine and Serve:
- Add the cooked pasta to the skillet, tossing to coat the pasta evenly with the creamy sauce and vegetables.
- Stir in the grated Parmesan cheese (if using) and half of the chopped basil and parsley.
- Cook for another 2-3 minutes, allowing the pasta to absorb some of the sauce.
Garnish and Serve:
- Remove from heat and sprinkle the remaining basil and parsley over the pasta.
- Serve immediately, with extra Parmesan cheese on the side if desired.
