Spinach & cottage cheese triangles


Olive oil

Glove of garlic, salt & pepper

240g fresh spinach

100g feta cheese

200g Langage Farm cottage cheese

1 egg, beaten

1 pack Filo pastry

Melted butter


Fry chopped garlic in olive oil, add spinach and keep stirring on medium heat.   Add Langage Farm cottage cheese and feta cheese and continue to stir.  Drain off excess moisture and return to heat and add beaten egg.  Once all mixed thoroughly leave to cool.

Preheat oven to 200ºC.  Unfold filo pastry and cut into 5″ strips.  Brush each strip with melted butter and add one tablespoon of spinach mixture.  Fold the end of the strip over the mixture into a triangle.  Continue folding into triangle until you have a small triangular stuffed pastry.  Place on a large baking tray and bake for 15 – 20 minutes until golden brown.  Serve warm.
