Peach mousse


8 leaves gelatine (or powder equivalent)

1 tin peaches

400g Langage Farm natural yogurt

1 – 2 tbsp. lemon juice

6 tbsp. sugar

1 tsp vanilla essence

400g Langage Farm double cream




6 leaves of gelatine and 2 leaves of gelatine separately soaking (as per instructions).  Drain tin of peaches and puree all peaches  apart from two.  Chop two peaches into small cubes.  Mix together in a bowl two leaves of gelatine and peach puree.  Spoon puree mixture into 4 – 8 glasses and chill in fridge.

In a bowl mix Langage Farm yogurt, lemon juice and sugar.  Mix the 6 leaves of gelatine with 4 spoonful’s of yogurt mixture, then add to the rest of the yogurt mixture.  Chill in fridge for 15 minutes.  In a separate bowl whisk Langage Farm double cream to form a peak.  Fold double cream into the yogurt mixture.  Add the cubes of peaches.  Spoon mixture on top of the peach puree in the glass bowls.  Chill for 4 hours or overnight.
