Mini chocolate cheesecake


16  chocolate digestive biscuits

25g melted butter

450g Langage Farm full fat cream cheese

350g Chocolate hazelnut spread

220g icing sugar

1tsp vanilla essence

60g Langage Farm double cream

220g Langage Farm double cream

80g dark chocolate



Melt butter and add crushed digestive biscuits.  Place into small dishes and press down firmly, cool in fridge overnight.

In a large mixing bowl whisk together Langage Farm full fat soft cheese, icing sugar, chocolate hazelnut spread, vanilla essence and Langage Farm double cream.  Spoon mixture onto biscuit layer.  Chill for an hour.

Melt dark chocolate in microwave or over hot water.  In a separate bowl whisk up Langage Farm double cream.  Fold melted chocolate into double cream.  Spoon onto mini chocolate cheesecake and chill for a few hours.  Enjoy!
