Double chocolate muffin


200g Langage Farm Curd cheese

200g Langage Farm double cream

125ml milk

150g butter

225g caster sugar

2 tsp vanilla extract

2 eggs

40g Cocoa powder

2 tbsp. baking powder

75g plain flour

275g dark chocolate


Place muffin cases into a muffin tin.  Warm up 125ml milk.  Mix soft butter, caster sugar and vanilla extract until creamy, add eggs and continue to whisk.  In a separate bowl mix together plain flour, baking powder and cocoa powder.  Fold flour mixture into the creamy sugar mixture.  Add warm milk and mix lightly by hand.  Place the mixture into 20 small muffin cases and bake for approx. 20-25 mins in the oven at 150ºC.  Once done, cool down completely.

Melt 75g dark chocolate, with a spoon place some chocolate in a circular shape a sheet of baking paper.  Place in fridge to chill.

Melt 200g dark chocolate with 3 tbsp. Langage Farm double cream.  Leave to cool a little then add 200g Langage Farm curd cheese and continue to mix until smooth and creamy.  Place spoonful of curd cheese mixture onto each muffin and chill for 20 mins.

Whisk 200g Langage Farm double cream until soft peak, place small dollop onto of muffin.  Take out chocolate circles and place on top.  Cover all muffins and keep in fridge until required.  Enjoy with family and friends.
