Creamy Carrot Soup

Come in from the cold and warm up with a delicious bowl of homemade soup with a little Langage luxury!

Ingredients:

  • 2 tbsp olive oil or butter
  • 1 onion, chopped
  • 600g carrots, peeled and sliced
  • 1 potato, diced (for extra creaminess)
  • 750ml vegetable stock
  • 150ml Langage Farm pouring cream
  • Salt, pepper, and ground nutmeg (optional)
  • Fresh parsley, for garnish

Method:

  1. Heat the olive oil or butter in a large pot over medium heat. Add the onion and sauté until softened.
  2. Stir in the carrots and potato, cooking for 5 minutes to coat them in the oil.
  3. Add the vegetable stock and bring to a boil. Lower the heat and simmer for 20 minutes, or until the carrots and potato are tender.
  4. Remove from heat and blend the soup until smooth using a hand blender or food processor.
  5. Stir in Langage Farm pouring cream and season with salt, pepper, and a pinch of nutmeg if desired.
  6. Reheat gently, then serve garnished with fresh parsley.
