January 16, 2025 Recipes Creamy Carrot Soup Come in from the cold and warm up with a delicious bowl of homemade soup with a little Langage luxury!Ingredients:2 tbsp olive oil or butter1 onion, chopped600g carrots, peeled and sliced1 potato, diced (for extra creaminess)750ml vegetable stock150ml Langage Farm pouring creamSalt, pepper, and ground nutmeg (optional)Fresh parsley, for garnishMethod:Heat the olive oil or butter in a large pot over medium heat. Add the onion and sauté until softened.Stir in the carrots and potato, cooking for 5 minutes to coat them in the oil.Add the vegetable stock and bring to a boil. Lower the heat and simmer for 20 minutes, or until the carrots and potato are tender.Remove from heat and blend the soup until smooth using a hand blender or food processor.Stir in Langage Farm pouring cream and season with salt, pepper, and a pinch of nutmeg if desired.Reheat gently, then serve garnished with fresh parsley.
