Clotted Cream Christmas Cookies
These are not your average cookies! We’re celebrating the season with the ultimate upgrade: adding a secret spoonful of our famously rich Devonshire Clotted Cream right into the dough. This makes for a wonderfully rich, soft, and buttery biscuit that truly melts in your mouth.
You’ll get a batch of cookies that are delightfully festive and ‘udderly delicious’!
What You Need
(Makes about 20 medium cookies)
225g plain flour
1/2 tsp baking powder
Pinch of salt
115g unsalted butter, softened
100g caster sugar
3 heaped tbsp of Langage Farm Devonshire Clotted Cream (This is the key to the melt-in-your-mouth texture!)
1 tsp vanilla extract
1 medium egg yolk
Optional: 1 tsp cinnamon or mixed spice, for a festive flavour kick!
Directions: Mixing Magic & Festive Shaping!
Dry Mix: Whisk the flour, baking powder, salt, and spices (if using) in a medium bowl. Set aside.
Cream the Devon Dream: In a separate, large bowl, use an electric mixer to beat the softened butter and sugar until light and fluffy. Now, add the star ingredient: the Langage Farm Devonshire Clotted Cream and vanilla extract. Beat until fully incorporated and the mixture is even creamier.
Combine: Beat in the egg yolk until just combined. Gradually add the dry ingredients and mix on a low speed until a soft dough forms. Do not overmix!
Chill Time: Flatten the dough into a disc, wrap it tightly in cling film, and chill in the refrigerator for at least 1 hour. This makes the dough much easier to roll and cut.
Roll & Cut: Preheat your oven to 180°C (160°C fan/Gas Mark 4) and line a baking tray with parchment paper. Lightly flour a work surface and roll out the chilled dough to about 5mm thickness. Use your favourite festive cookie cutters (stars, trees, snowmen) to cut out shapes.
Bake: Place the cut-outs on the prepared tray and bake for 8-10 minutes, or until the edges are lightly golden.
Cool & Decorate: Let the cookies cool on the tray for a couple of minutes before carefully transferring them to a wire rack to cool completely.
Decorate with royal icing, sprinkles, or just enjoy them plain—they are delicious either way!
