Chocolate Mud Pie


Base: 75g butter, 150g digestive biscuits, 150g chocolate cream biscuits (Oreo)

Filling: 135g dark chocolate, 135g butter, 3 eggs, 150g light brown sugar, 25g cocoa powder, 150ml Langage Farm double cream

Topping:250ml Langage Farm double cream, 1 tbsp. caster sugar, 25g grated chocolate



Crush both biscuits, melt butter and mix together.  Place cream mixture into a round cake tin and chill for 30 mins.

Melt dark chocolate and add butter, let it stand for 10 mins once fully melted and combined.  Beat eggs and sugar until light and creamy, whisk in the melted chocolate, cocoa and Langage Farm double cream until well combined.  Pour mixture on top of the biscuit base and bake at 180ºC for 35-40 mins.  Leave to cool, the filling will sink a little.  When cool remove from tin and chill for 1 hour in the fridge.  Whisk Langage Farm double cream and caster sugar and spoon on top of the cake, sprinkle with chocolate.   Enjoy a slice with your tea/coffee!
