Chocolate Chip Cake


3 eggs

pinch of salt

100g melted butter

220g caster sugar

220g plain flour

1 tsp baking powder

100g chocolate chips

5 tbsp. chocolate spread

100ml Langage Farm double cream

100g dark chocolate


In a bowl whisk 3 eggs, pinch of salt and 220g caster sugar with an electric whisk until creamy.  Add 100g melted butter, baking powder and continue to whisk.  Sieve 220g plain flour into the mixture and mix through with a wooden spoon.  Add chocolate chips and mix through.  Place half of the mixture into a lightly greased round cake tin.  Carefully spoon chocolate spread into the middle of the mixture.  Spoon the remainder of the mixture on top.  Place cake tin into a preheated oven and bake for 35 minutes at 190ºC.

Cool cake and dust with icing sugar.

Place 100ml Langage Farm double cream into a saucepan and heat gently.  Add 100g dark chocolate and stir until fully melted.  Either pour the chocolate cream of the cooled cake for a glazing.  Or whisk the chocolate cream once cooled down fully and pipe onto the cake.
