Pavlova

Ingredients

4 x egg whites

1 x cup of castor sugar

1 x teaspoon vanilla essence

1 x teaspoon malt vinegar

1 x 10oz Langage Farm double cream

Fruit to decorate

 

 

Directions

Whisk the egg whites together in a bowl until stiff.  Slowly add the sugar, a bit at a time until it is all mixed.  Add the vanilla essence and vinegar and mix together.  Spread the meringue mixture onto a tray lined with lightly greased tinfoil, in the shape of a rough circle and slightly scooping the centre to take the decoration.

Pre-heat the oven to the highest temperature.  Put the tray with the meringue into the oven and immediately turn the oven down to the lowest temperature.  After one hour, turn the oven off and leave the meringue in the oven overnight.

Whisk Langage Farm double cream until thick and place in the centre of the meringue nest.  Decorate with fruit of your choice.
