Curry rice salad

Ingredients

250g plain boiled rice

200g Langage Farm natural yogurt

2 tbsp. mayonnaise

2 apples

5 gherkins

1 red and yellow pepper

200g ham

100g chorizo sausage / bacon bits

3 tbsp. curry powder

2 tbsp. paprika

pinch of salt

 

Directions

Cook rice and leave to cool.  Fry off chorizo sausage or bacon bit and leave to cool.  Chop all ingredients into small pieces.  Add all ingredients including chorizo sausage into a large bowl, add cooked rice.  In a separate bowl/jug with yogurt, mayo and spices – alter spice to your taste, mix well.  Add to bowl of ingredients and mix together.

Delicious healthy rice salad with chicken, barbequed meats or on it’s own.
