Banana yogurt muffin

Ingredients

2 bananas mashed up

180g Langage Farm natural yogurt

2 eggs

250g flour

2 tspn baking powder

100g caster sugar

1 tspn vanilla essence

Topping:

75g Dark chocolate

200g Langage Farm curd cheese

1 tspn butter

Directions

Mix mashed banana with Langage Farm natural yogurt. Add eggs and mix well.  Add flour, baking powder, sugar and vanilla essence and continue to mix.

Add any chopped fruit, nuts or chocolate to the mixture. (Chopped walnuts or chopped hazelnuts taste nice in these muffins)

Spoon out mixture into muffin cases and bake in a pre-heated oven at 200ºC for 25mins.

For topping:

Heat butter in a pan on low heat, add dark chocolate and stir until fully melted.  Put chocolate to one side and let it cool down.  Once cooled down add Langage Farm curd cheese and mix well.  Top all cooled muffins with chocolate mixture and place in fridge.

Decorate with icing, fresh cream or chocolate curd cheese.
