Apple yogurt cake

Ingredients

130g softened butter

180g caster sugar

200g Langage Farm natural yogurt

2 eggs

190g self raising flour

1 tbsp. vanilla extract

1.5 apples

1 tbsp. cinnamon

20 Demerara sugar

Directions

Preheat oven to 180°C / gas mark 4, grease 22cm round cake tin.

In a large bowl cream the butter and sugar until light and fluffy.  Add eggs, one at a time and beat mixture after each addition.  Add the vanilla extract and mix in.  Fold in the flour, then fold in the yogurt until the mixture is just combined.  Pour mixture into the cake tin.

Peel, core and slice apple and arrange the slices on top of mixture.  Mix Demerara sugar and cinnamon and sprinkle over the apple slices.

Bake for 1 hour.

Leave to cool for 30mins in the tin before transferring to a cooling rack.

Enjoy with a dollop of Langage Farm clotted cream.
